Vegan Cheese Sauce - Food Plan Friendly

Ingredients
1/2 cup Blended Oat bran (Or Soy Protein Powder)
1/2 cup nutritional yeast
1/4-1/2 cup Margarine or Olive Oil
1 1/2 - 2 cups water (OR Milk)
1 tsp Soy sauce OR Mustard
spices to taste (e.g. salt, garlic powder, minced onion, nutmeg, paprika/tumeric, etc. See ref. for measurements)
(optional) 1 tbsp cider/balsamic vinegar or lemon juice

Directions

  1. Melt one stick of margarine add 1/2 cup oat bran, stirring continuously
  2. Add 1 1/2 cups water, stirring continuously
  3. Add some soy sauce, whatever spices you please (chille powder, paprika, garlic, taragon, etc...)
  4. When it thickens, turn off heat
  5. Add 1/2 cup nutritional yeast, stir..
  6. Add additional water a little at a time to desired thickness

IDEAS: Mix into casserole or mix into cut up potatoes, cover with foil and bake until done or spread on crackers, add tomato sauce and diced/pan fried tofu for great cracker topping.
