Ingredients
- 4-6 Eggs
- 8-12 oz Cooked Crumbled Sausage
- 1 1/2 cups Cottage Cheese
- 1 cup Milk
- 40 oz Diced/hash-browned potatoes uncooked
- 1 cup diced onions
- 2 cups diced peppers
- 1 cup thinly sliced mushrooms
- (optional) 1 cup diced broccoli heads
- (optional) 1-2 chilli peppers
- Salt and pepper to taste (though seasoning on sausage is usually sufficient)
Serving: 4 servings
Directions
- Preheat oven to 350 degrees.
- In a bowl mix together eggs, milk, cottage cheese and sausage.
- In a saucepan soften/caramelize vegetables (add a touch of water and stir often).
- Spray a large cake pan/casserole pan with cooking spray.
- Layer potatoes on bottom of the pan
- Cover potatoes with vegetables.
- Pour egg, sausage, dairy mix over the top of vegetables and spread evenly, covering everything
- Place in oven and let bake for 45-50 minutes - until the milk/juices are bubbling and the potatoes are soft (the cottage cheese will also be melted at least partially).
