Quinoa Dinner Quinoa, Fish and Vegetables
1 1/2 c. Quinoa 1 onion, 1/2 c. green pepper
1 1/2 c. broth
1 1/2 c. water
Toast quinoa in a dry pan until it is slightly darker. Then add boiling liquid to it. Let the quinoa simmer in the broth until it soaks it up. It will take about 15 - 20 minutes on a low heat. Saute vegetables, it can be any blend of vegetables and add them to the simmering quinoa.
Tonight I put fish in the oven in a glass pie dish. I put lemon pepper on top and lemon juice around it. I covered it with foil. I put it in the oven at 350 for appr. 15 - 20 minutes also. It was moist and tender.
For a vegetable I boiled water and added 1 bag of spinach. Broccoli would have been good too or brussel sprouts. (or any vegetable of choice.)
The quinoa was good. I have some left over. I think that I will mix it with rice for a different meal later.
