Quinoa Fried Rice - Food Plan Friendly

Ingredients:
1 cup uncooked quinoa (or rice)
2 cups water
2 lightly beaten eggs
1 cup (snow) peas, sliced on a diagonal
2-3 green onion, sliced into 1/2" slices on a diagonal
1 red bell pepper, small diced
1 1/2 tbsp olive oil, divided
2 tbsp soy sauce
(optional) substitute 1 tbsp sesame oil for same amt of olive oil

Serves 2, tastes good with fish or thin stips of fried pork

Directions:
  1. Combine quinoa and water in a medium sized pot. 
  2. Bring to a boil then reduce heat and simmer for about 13 minutes, or until the quinoa has absorbed all of the water. After the quinoa has cooked, fluff with a fork and take off the heat.
  3. Spray large skillet or wok with cooking spray. Place over high heat. 
  4. Once the oil is hot, add the eggs and cook until just done {still a tad runny}. 
  5. Slide eggs out onto a plate and set aside. 
  6. Drizzle in the remaining oil and add the snow peas, red bell pepper and green onion. 
  7. Saute for about three minutes, until veggies are just tender. Add the quinoa and stir. Add the eggs back in, as well as the soy sauce (and sesame oil).
  8. Mix well.
  9. Remove from heat and serve!
