Sausage Spice Mixes - Food Plan Friendly

SeasoningIngredientsSpecial Instructions
Italian
  • 4 teaspoons dried parsley
  • 1 tablespoon dried Italian seasoning (Italian Seasoning)
  • 1/2 tablespoon fennel seed
  • 2 teaspoons ground black pepper
  • 2 teaspoons coarse (granulated) garlic powder
  • 2 teaspoons paprika (sweet or hot)
  • 4 teaspoons salt
  • (Optional) 1 teaspoons crushed red pepper flakes
  1. In a medium bowl (small cereal bowl size), crush the dried parsley and Italian herbs with your fingers to release their flavor.
  2. Add the fennel seed, black pepper, garlic powder, paprika, salt, and red pepper flakes. Mix with a fork and transfer to an airtight container for storage.
  3. Use 1-2 tablespoons of Italian Sausage Seasoning per pound of ground meat. If you like it smokin’ hot, increase the paprika and red pepper flakes by about half.
Makes about 4 Tbs of Sausage Seasoning.

Gourmet Italian Mild
  • 2-3 teaspoons salt
  • 1 1/2 teaspoon crushed anise (or fennel) seed 
  • 1/4 teaspoon dried red pepper flakes (can use more if desired)
  • 1 teaspoon paprika (use mild paprika)
  1. Mix 2 TB mix then add to 1 lb meat.
Tastes: Savory
Gourmet Italian Sweet
  • 2-3 teaspoons salt
  • 1 1/2 teaspoon crushed fennel (or anise) seed
  • 2 teaspoon paprika (use mild paprika)
  1. Mix 2 TB mix then add to 1 lb meat.
Tastes: Sweet with mild kick
Polish <Keilbasa>
  • 1 tbsp marjoram
  • 1 tbsp salt
  • 2 tsp black pepper
  • 1 tsp garlic powder
  1. Mix 1 1/2 TB mix then add to 1 lb meat.
Tastes: Savory and Peppery
Country Breakfast
  • 1 tbsp salt
  • 1 tsp ground pepper
  • 2 tsp rubbed sage
  • 1 tsp thyme
  • 1 tsp cayenne pepper
  1. Mix 1 TB mix then add to 1 lb meat.
Tastes: Peppery
Polish
  • 1 tbsp onion powder
  • 1 tsp dried coriander
  • 1 tsp freshly ground black pepper
  • 2 tsp salt
  1. Mix 2 TB mix then add to 1 lb meat.
Tastes: Very mild sweet taste - good for Turkey rub (when baking a turkey)
Spanish Chorizo 
  • 1 tbsp onion powder
  • 3/8 tsp garlic powder
  • 1-tsp paprika
  • 1/2-tsp cayenne
  • 1 tsp oregano
  1. Mix 2 TB with a small amount of white vinegar
  2. Add to 1 lb meat
Tastes: Mild onion taste - very mild
